VT has been part of my lunch in the office for a couple of years now. I had been diagnosed with IBS and was controlling it through dietary tips from www.helpforibs.com which centers around soluble fiber. I wanted to make sure I was getting enough vegetables so I became familiar with VT when I found it in the waiting room at my acupuncturist's office. Some of my go-to favorites for lunch are Curried Penne, Herb Roasted Winter Vegetables, and Ultimate Veggie Fried Rice. I make something on Sunday and take it everyday for lunch!
