I am not a complete vegaterian. I do not eat meat during the week. But over weekends I do. Just a new diet I took on to challenge myself. Plus I watched Food Inc and that traumatised me for life.

I manage a kitchen and am always rushing to eat my own lunch. I have been consciously recording what I eat for the past 6 weeks. I am looking forward to this challenge because I will HAVE TO EAT responsibily! Thank you.

Wow! I just saw the Black Bean and Toasted Corn Tacos on your May cover, and I am intrigued! I'm gonna do the Lunch Challenge, and I'm starting with tacos!

This is a great idea. My lunch is my total downfall. Weekend lunches are pretty good, but office lunches are...not so good.

I already am vegan, however any and all hints, tips or recipes for lunch will help. I get lazy and it gets boring. I'll be here! Monday in May! What a good deal. Thanks.

My lunch habits need a total makeover. I am so up for this challenge!

Ok I started today cos where I live its already Monday. I work from home so I did half an hour of yoga instead of the walk. I ate after the meditation and I had the Spicy Bahn Mi. It was fantastic, yummy and filled me right up for the day, no snacking so far. What an energy boost in the middle of the day:) Good to go for tomorrow!

I never know what to eat for lunch. Even when I'm home, it never occurs to me to cook. I want to take the challenge, but even today, I ate a salad from the cafeteria because we had no leftovers from dinner last night. Sigh. Still, I'm motivated to make these delicious sounding recipes for dinner and save some leftovers for lunch. Tonight are the black bean tostados/tacos.

Tried the black bean and toasted corn tacos the other night and am having the leftovers for lunch today. Delicious! Tonight's dinner is going to be the crustless leek, greens and herb quiche. Can't wait!

I took a 15 min walk, and then walked up stairs for 15 minutes. I feel less hungry after the excercise. I am keeping away from the computer and eating a spinach and avocado salad with dijon mustard dressing and sunflower seeds. I feel much better and good. This is a great challenge.

Frustrated with eating lean cuisines for lunch all the time this challenge will be great!

My husband and I are "new" vegetarians (about a year) and lunch seems to be the most difficult for me, the cook. I am so glad you are doing this. We started this when my husband was diagnosed with adv. prostate cancer and although we ate a lot of veggie meals, the research indicated we needed to do more. So far, so good. Eating well along with treatment. Thank you.

This is great, but it will take a bit of planning (i.e., shopping) beforehand. I plan to start Thursday. What a great idea!

I was all set for the challenge. I cooked the quiche over the weekend and took it along with a salad to work. When I opened what I thought was quiche I discovered something that had been in the refrigerator way too long and my quiche was still sitting waiting for me at home. Oh well, the salad was great but I was pretty hungry by dinnertime. Next I clean the refrigerator!

I have initiated the "healthy brag" between some family and friends. Each day we email each other and say what the healthiest thing is we ate the day before. You can't help feeling a little bit competitive; and we find it is giving us some incentive to eat healthy - so we can brag about it! A fast healthy lunch I do often is Quesadillas! In the morning I'll place one or two corn tortillas in a dry skillet just to soften. Remove the tortillas, smear half of a tortilla with refried beans (or any interesting leftovers from the fridge), sprinkle with some grated cheese and cilantro if I have it, fold in half, wrap in waxed paper. Heat briefly in the microwave at work later.

I read this article in the latest issue and I couldn't wait to get started! Lunch time is always my downfall! Now I can turn that all around.

I just finished Day 3 and the Paprika Cauliflower was really good. I cooked two serves to last me two days. It was way better than I thought it would be. Ive either been walking or doing yoga before lunch, then some deep breathing. I am feeling way more energized and I got to my desk a whole hour earlier than usual today. So far the lunches are very hearty and filling and I like that.

My son and I decided to go completely vegetarian this week. It's great having so many lunch ideas to pick from. We also like Southwest Tofu Scramble with toasted pita.

I tried the black bean and toasted corn tacos for dinner (added some roasted peppers and cherry tomatoes) and then ate the left overs for lunch. Fabulous! Highly recommended.
