Thank you so much for this information - what a great article and meal plan. I have for a long time noticed that it is hard to find a structured framework for a daily meal plan for Vegetarians. For example: Breakfast: 3 Protein, 2 whole grains, 1 fat, 1 fruit.... etc. It would be amazing to see an article or a guide that outlines a structure like this for each meal. What it should contain to get to the same calorie structure...so that when 7 weeks are up, I know how to get to the right portions to meet my daily requirements? Is there anywhere you can recommend that I could find something like this?
Too many different meals and portions are for 6 to 8 for recipes, some not easy to cut back. The shopping list is enormous. Also, because each meal does not contain calories for that meal, substitutions are not an option without spending a lot of time searching for calorie counters and calculating. It is free however and perhaps can be used as a guide instead of a definitive meal plan.
I went vegetarian when I watched the documentaries on Netflix. Its changed my life drastically. I feel better such as, having more energy, being able to sleep better, not feeling so sick, losing unwanted weight, just knowing I have an overall better health. Not only that I have more people questioning if they should do it. Some of them have and said it wasn't for them but its not for everyone I guess. Anyways just wanted to say how much its made me better.
Will this diet lead to weight loss? My weight has gone out of control (alot due to hormonal shifts and intense ongoing stress) so I need to drop this belly fat & all over trim down. 1600 seems a high calorie count per day. Thanks!
One of the big criticisms I have of something like the portion control that is being blogged is the fact that it is too time consuming and also labour intensive and probably quite wasteful. More meals should be repeated and breakfasts, well, a choice of no more than two. I don't think you should have to get involved in the kitchen every day. A real turn-off I'm afraid and a way to fall off the wagon!

I am from a small Caribbean island and can not find everything in the shopping list for the 7-day meal plan, but what I do find is very expensive. Is there anything that I can substitute with?
what can I substitute milk / egg with?
I cooked the peppery spinach with nutmeg in a casserole dish instead of ramekins. I am measuring all my portions...is a serving of this dish a cup or a different amount?

This is my first attempt at eating vegetarian for any period of time. I'm a good cook with meat. But, I'm lousy at vegetarian cooking. Where do I find the recipes for these dishes. I want to be successful.
