Apple and Red Cabbage Slaw

This fall slaw is packed with surprises: cilantro, citrus, and crunchy-sweet apples.



Ingredient Line: 
3 cups coarsely grated red cabbage
Ingredient Line: 
1 medium orange bell pepper, thinly sliced
Ingredient Line: 
1 Granny Smith apple, cored and cut into matchsticks (1ΒΌ cups)
Ingredient Line: 
1 cup cilantro leaves, chopped
Ingredient Line: 
3 Tbs. fresh orange juice
Ingredient Line: 
2 Tbs. apple cider vinegar
Ingredient Line: 
1 Tbs. agave nectar
Ingredient Line: 
2 tsp. whole-grain Dijon mustard
Ingredient Line: 
2 tsp. olive oil


1. Toss together cabbage, bell pepper, apple, and cilantro in large bowl.

2. Whisk together remaining ingredients in small bowl. Drizzle dressing over cabbage mixture, and toss to combine. Season with salt and pepper, if desired.

What would be a good entree match for this slaw?

Very yummy. I made for a potluck lunch and revived many compliments. I added some sunflower seeds and used honey instead of agave.

Delicious, my cilantro was old, so used a bunch of green onions finely chopped.

I had a grilled "Reuben" the other day that used a similar coleslaw and I can see using this on a sandwich of that type. Just use rye bread, coleslaw and top it with melted Daiya swiss cheese.

Pretty tasty (even without cilantro -- used some h. de provence -- and substituting honey for agave and lemon for orange and horseradish for dijon).

I buy cabbage - red and green already cut in packages at 99c store. 1 bag of various peppers (bagged) 99c - fresh herbs and spices (from garden) washed and prepared. use Tangerine juice instead of orange. 1 Tb honey. no oil. add sweet carrots (usually the cabbage bags have carrots (like matchsticks) with them. I add cranberries to these - and toss I don't use dressing - instead mix herbs and sprinkle over ea individual serving. (herbs of your choice) mint leaves from garden, sprinkle of cinnamon, mustard can be honey/brown or your taste - no vinegar - its wonderful
