Apple-Oat Muffins

This muffin is so delicious and moist, its one of our top 5 favorite recipes in the issue. The batter fills the muffin cups more than most recipes, but it wont overflow when baked.
- 2 cups peeled, finely diced apples, such as McIntosh (2 to 3 medium apples)
- 1 ½ cups all-purpose flour
- 1 cup quick-cooking oats
- ⅔ cup firmly packed brown sugar
- 1 ½ tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- ½ tsp. ground cinnamon
- 8 oz. plain low-fat yogurt (1 cup)
- ¼ cup non-fat milk
- 2 Tbs. vegetable oil
- 1 tsp. vanilla extract
- 1 large egg

These muffins are very very yummy. I would recommend completely. I kept the apples out because I didn't have any on hand. However, they still tasted delicious! The apples would have made them that much better. Thank you! :)
