Asian “Chicken” Rolls

These crispy spring rolls make a perfect appetizer for a full-blown Asian dinner of fried rice, sweet-and-sour tofu or crispy noodles. The accompanying dipping sauce offers a satisfying counterpoint to the Jasmine tea, which is the ideal beverage. Ginger ice cream complements the meal.
“Chicken” Rolls
- 1 Tbs. plus 1 cup vegetable oil for frying
- 6 oz. soy “chicken” strips
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 6 rice paper wrappers
- 1 packed cup shredded carrots
- 12 stems cilantro, rinsed and trimmed
- ½ cup fresh mint leaves
- Crushed peanuts for garnish, optional
- ⅓ cup fresh lime juice
- ¼ cup water
- ¼ cup sugar, or to taste
- 1 tsp. minced garlic
- 1 tsp. Asian chili paste, or to taste
- ¼ cup shredded carrots
