Austrian Pickled Red Onions
Makes 2 cups
In Austria, pickled red onions are served with rye bread and a paprika-flavored cheese spread. The onions make a great topping for sandwiches, veggie burgers, and tacos.
- ½ cup apple cider vinegar
- ⅓ cup sugar
- ½ tsp. black peppercorns
- ½ tsp. salt
- 6 whole allspice
- 1 small clove garlic, peeled
- 1 small bay leaf
- 1 large red onion, halved and thinly sliced (2 cups)
