Avocado Chimichurri Bruschetta

Talk about a fusion of world cuisines! Cubes of avocado are folded into chimichurri—an Argentinean sauce made of chopped parsley, cilantro, garlic, vinegar, and oil—to create a Latin variation on bruschetta, a classic Italian starter.

2 Tbs. lemon juice

2 Tbs. red wine vinegar

3 cloves garlic, minced (1 Tbs.)

¾ tsp. salt

½ tsp. red pepper flakes

½ tsp. dried oregano

¼ tsp. ground black pepper
Ingredient Line: 
¼ cup olive oil

¼ cup chopped cilantro

¼ cup chopped fresh parsley
Ingredient Line: 
2 avocados, peeled, pitted, and cubed
Ingredient Line: 
6 ½-inch-thick slices whole-grain or ciabatta bread, toasted


Combine lemon juice, vinegar, garlic, salt, red pepper flakes, oregano, and black pepper in small bowl. Whisk in oil, then stir in cilantro and parsley. Fold in avocado cubes. Spoon avocado mixture onto toast slices, and serve.

OMG!!!! I just love this recipe and have shared it with many friends. Add a great bottle of wine and dinner is ready! Love it!

We've been making this often, sometimes more than once per week. Our favorite variation is to forgo the bread and use a bed of spinach to make an amazing salad (we like to call it "KICKIN' CADO SALAD"). Very well done on this recipe VT!!!

I like the look of this burrito. I am doing a grilled corn, garden tomato, cumin, lime juice, refried beans, grilled orange bell pepper, black pepper& green onion filling in english flour tortillas tonight (with high-test hot sauce for me). Viva la...South-West!

One of VT's GREATS! To lower calories and add in a shot of great health, leave out the bread and put the avocado mixture on a bed of raw baby spinach leaves instead.

Excellent recipe! But this is not the original Chimichurri Argentinian sauce. We don't use lemon, cilantro and olive oil. In Argentina we use just Italian parsley and corn oil. The predominant color of best chimichurri recipe is red!!!

Like a fantastic cross between guacamole and mojo (but easier to make than mojo)! LOVE it and will make it again...and again...and again...

I love bruschetta, but my husband doesn't like tomatoes. This is the perfect substitute! I actually like it better than traditional bruschetta.

Excellent recipe. I made chimichurri for the first time this past weekend for a party that I hosted and this recipe was quick and easy to follow. Everybody at the party loved it and asked who made it :) FYI - I used a pomegranate flavored red wine vinegar and it tasted excellent. I haven't used the normal red wine vinegar yet with this recipe.

I love this, in particular with fresh oregano. This recipe still bounces around on my thought-screen bubble, and I am still making this, 7 years after the 2008 issue!

I LOVE this recipe. I am not vegetarian, but would definitely eat this in lieu of a meat dish, because it is so delicious! I've never had fresh herbs on hand and have used dried instead and the result is still good. I also ended up using pretzel buns instead of ciabatta, because that is what was on hand and they were phenomenal.

Dare I say best appetizer ever? I've made this twice so far and both times guests were begging me for the recipe. I highly suggest using fresh herbs. Will make again and again! Thanks VT
