Avocado-Mango Smoothie
Serves 2
30 minutes or fewer
- 1 ¼ cups coconut water
- ½ medium Hass avocado, pitted, flesh scooped out
- 2 Tbs. walnuts
- 1 ½ tsp. lime juice
- ¾ cup frozen mango cubes

Place all ingredients in blender in order listed, and blend 30 seconds, or until smooth.
March 2013 p.40If you want to make this a slightly more frozen type of drink, I froze some coconut water in cubed and dropped them in at the end. Great smoothie overall though.

VeggieDAD - 2013-03-15 11:54:17Used to make pure avocado smoothies, but this is so much better. Except I never tried it with coconut water because I can't stand bottled coconut water. Instead I used water, added a handful of coconut and I make it all the time now!!!
