Avocado-Spinach Panini

Avocado-Spinach Panini

Serves 4

30 minutes or fewer

Smoked sun-dried tomatoes give this sandwich a meaty taste and texture.
  • 2 avocados, halved and thinly sliced
  • ⅓ cup julienned, smoked sun-dried tomatoes (1 oz.)
  • 2 Tbs. diced red onion
  • 2 cups lightly packed baby spinach
  • 4 4-oz. ciabatta rolls, split in half

1. Layer avocado slices, tomatoes, onion, and ½ cup spinach on each roll. Spray panini with cooking spray.

2. Coat skillet or grill pan with cooking spray, and heat over medium heat. Place panini in pan; weight with smaller-diameter saucepan weighted with 1 or 2 cans. Cook 2 minutes, remove weight, flip panini, replace weight, and cook 1½ to 2 minutes more. (Or cook 4 minutes in panini maker.)

Why is the Avocado-Spinach Panini rated as vegan when the nutritional information shows that it has 5 mg of cholesterol in it? Is it vegan or is it not? This is very important to those of us who are vegans. Cholesterol is only present in animal products. If there are no animal products in this panini, shouldn't the total amount of fat and saturated fat be adjusted also?

Made this tonight and modified by blending roasted red peppers, roasted garlic and a couple sun-dried tomatoes into a spread. Added a bit of red onion to the spread and to the sandwich, as well. Used vegan provolone, which melted beautifully. As for the oil - instead of using a spray, I just lightly brushed each piece of the bread so it had a bit of flavor, but nothing over the top, whatsoever. Spectacular sandwich and very very filling.

Herbs and spices used instead of cooking sprays oils, to me far better. i don't use any cooking oil sprays - they are still oil. I use natural herbs-spices to coat a pan with some herbs have natural oils within them and give a really good flavor. The roasted flavor there is a small bottle in most stores labeled smoke flavoring this or herbs that give the same flavoring of smoked products - works well. OR just put it into an electric roaster and get the smoke roasted flavor. there is such a thing. Like there is a bottle of Butter Buds in most grocery stores - gives the flavor of butter but its not for popcorn. There are other bottles with herbs in them (varying flavors) for whatever foods you are preparing - NO OILS used. I eat vegan/vegetarian foods: the sandwich with spinich is great 1 sliced tomato (roma) 1 sliced avacado - and sliced purple onions - can add vegetarian cheese: pepperjack is a nice flavor - and toast this in toaster oven or roasting oven - (electric) not fried or with oil. OR if you have microwave that browns - there ya go.

My husband and I loved this sandwich! In fact, my husband, who is a meat eater, said this was the best non-meat sandwich he has ever had...and I have made him try a lot of different ones over the years. I couldn't find smoked sun-dried tomatoes at either of my grocery stores, so I stuck with the regular kind and added a light smear of a chipotle & roasted red pepper sandwich spread I saw at the store. I think it added the smokeyness that I would have been missing otherwise. Delicious!

This is fantastic. I absolutely loved this, my husband thought it was a little bland so I splashed some balsamic vinegar on and it made it even better. I will be making this again!!

I found this recipe the other day and was excited to try it because it seemed light and fresh. I was correct the fresh avocado and the spinach makes a great paring and the grilled ciabatta bread makes it a hearty sandwich. My husband was a bit skeptical because there wasn't any meat in the sandwich but he enjoyed it and said we could have it again.

I think I'm going to use organic whole grain bread for this recipe. Not sure about the smoked dried tomatoes. Honestly, if you have a non-stick surface panini press, the oil spray is not needed. I have made many sandwiches like this before, and onions and if your a mushroom fan like me any wild mushrooms are awesome on them!
