“Beef” and Ginger Dumplings

30 minutes or fewer
A plateful of hot dumplings preceded by a bowl of hot-and-sour soup makes a pleasing luncheon menu, accompanied by hot jasmine tea. This meal requires some organization and quick action, which you can easily achieve by lining up a row of wonton wrappers ready for filling and sealing all at one time. You can fry some dumplings while wrapping others, but dumplings cook and brown quickly, so you must keep an eye on the skillet while wrapping.
Dipping Sauce
- 2 Tbs. minced ginger
- 1 Tbs. minced garlic
- 1 Tbs. sugar
- 1 Tbs. soy sauce
- 1 Tbs. apple cider or rice vinegar
- ¼ cup water
- 6 oz. soy ground “beef” (about ¾ cup)
- 2 Tbs. minced ginger
- 1 Tbs. minced garlic
- 2 Tbs. soy sauce
- ¾ cup grated carrot
- 2 tsp. sesame seeds
- 28 3x3½-inch wonton skins
- 2 Tbs. vegetable oil for frying, or more as needed
