Berry Chocolate Shortcake
Serves 8 to 10
Use any combination of fresh berries, about 1 cup per person. At home, serve these with whipped cream or ice cream.
- 1 ¼ cups all-purpose flour
- 1 ½ cups sugar
- ⅓ cup unsweetened cocoa powder
- ½ tsp. baking soda
- ¼ tsp. salt
- ⅔ cup buttermilk
- ¼ cup vegetable oil
- ¼ cup butter, melted and cooled
- 1 large egg, beaten
- 1 tsp. vanilla extract
- 4 cups hulled and sliced strawberries
- 2 cups blackberries
- 2 cups blueberries
- 2 cups frozen sweetened raspberries

super fantastic cupcakes that need no icing, just as described I made these for my sis's bridal shower with strawberries and whipped cream. I was a bit surprised how moist they were, more like cupcakes than shortcake, but they served their purpose and did soak up some of the juice from strawberries which made them fantastic. Definitely a keeper in my recipe box anytime I need a good chocolate cupcake. Sprinkle sugar in the raw on the tops for a nice look and treat.
