Broccoli-Potato Stratas
Serves 2
Prepare these individual casseroles the night before, and pop them in the oven when you get home from work.
- 1 large or 2 medium sweet potatoes (2 lb.)
- 2 Tbs. skim milk
- Pinch ground nutmeg
- 1 ½ cups frozen broccoli florets
- 1 cup part-skim ricotta cheese
- 1 large egg, lightly beaten
- ⅔ cup frozen spinach, thawed and squeezed dry
- 3 tsp. grated Parmesan cheese, divided
- 3 Tbs. crushed potato chips, divided
