Buttery Bean Topping

For a make-your-own meal, nothing beats baked potatoes with all the fixings. Set the table with sweet potatoes cooked in the microwave and the following toppings for a healthful feast the whole family will love.

2 Tbs. unsalted butter

1 15-oz. can cannellini beans, rinsed and drained

1 Tbs. chopped fresh sage

Instructions: 

  1. Heat butter in skillet over medium-high heat. Sauté beans and sage in butter 3 minutes, or until hot.

This is incredibly easy but very good! I added a few chili flakes too and took this to a party and people kept asking for more.

This was actually so good! I added red chili flakes and some salt, since I used unsalted butter. Served with the ricotta-spinach topping as well.

Can't wait to try this with some fresh beans from the bulk bin at my local whole foods market. Stay away from the cans! ; ]
