Celery-Apple-Kiwi Juice with Ginger

Celery-Apple-Kiwi Juice with Ginger

Serves 2

30 minutes or fewer

The VT staff tested a few celery juice recipes, and this sweet, fruity version with gingery heat came out on top.
  • 1 large celery stalk
  • 1½ large Granny Smith apples, cored
  • 1 kiwifruit, peeled and halved
  • ⅓ cup loosely packed parsley leaves
  • 1 Tbs. minced fresh ginger
  • 2 tsp. lime juice

Place celery, apples, kiwifruit, parsley, and ginger into juice extractor; process into smooth juice. Stir in lime juice; serve.

This combination is delicious! Yes, you have to be careful with the ginger...the first juice I made I added too much and the taste was too strong..but then once you start making them more often you get an idea of what amounts and combinations you like!

I just made it but in mine I could take the celery. Thankfully it wasn't that bad though! Thanks for the recipe, I'm going to add it to my list!! Next time I won't add a whole stalk of celery!

I just made this and it was very good. Can't really taste the celery. I added a little cashew cremer for a nutty flavor instead of ginger.

Yummmmy! I just made one and it is DELICIOUS! I used 2 whole green apples, and just eyeballed the rest and it turned out PERFECT. BUT, next time, I will be using a little less ginger. I maybe should have actually measured that one because it is so strong. Thanks!!!
