Cheesy English Muffin Stacks

Serves 1

30 minutes or fewer

  • 1 whole-grain English muffin
  • 2 Tbs. finely diced green onion
  • ¼ cup low-fat ricotta cheese
  • 2 slices tomato
  • 2 slices tempeh bacon
  • 2 oz. grated light Cheddar cheese

Split and toast English muffin in toaster oven. Stir green onion into ricotta cheese, then spread mixture onto each English muffin half. Top each with 1 slice tomato, 1 slice tempeh bacon, and 1 oz. grated light Cheddar cheese. Return to toaster oven, and toast 3 to 5 minutes, or until Cheddar has melted.

I love these! I didn't have fresh tomatoes on hand, so I've been playing around with stirring sun dried tomatoes or salsas into the cheese.
