Chewy Oatmeal Bar Cookies

Baked all at once in a single pan, bars are a convenient alternative to individual cookies. These bars are similar to old-fashioned, chewy oatmeal cookies, but they are more healthful than traditional recipes because they include tofu, rather than butter, plus whole wheat flour and nutty wheat germ.
- ¾ cup raisins or dried cranberries
- ⅓ cup walnut halves or pieces (optional)
- ¼ cup all-purpose flour
- ¼ cup whole wheat flour
- ½ tsp. baking soda
- ¼ tsp. salt
- ½ tsp. ground cinnamon
- 1 cup old-fashioned rolled oats
- ½ cup toasted wheat germ
- ½ cup low-fat silken tofu
- 1 large egg or equivalent egg substitute
- ⅓ cup vegetable oil
- ⅓ cup packed light brown sugar
- ⅓ cup sugar
- 1 tsp. vanilla extract
