?Chicken? Salad Sandwich

Serves 4

 This sandwich tastes great on herbed or sun-dried tomato bread.  
  • 1 1-lb. pkg. “chicken”-flavored seitan strips
  • ⅓ cup grated carrot
  • 1 stalk celery, minced
  • ⅓ cup minced red or green onion
  • ⅓ cup pecans, optional
  • ⅓ cup low-fat or vegan mayonnaise
  • Salt and pepper to taste
  • 8 slices bread of choice
  • Lettuce leaves and tomato slices for garnish
  1. Cut seitan into bite-sized pieces. In large bowl, mix seitan and remaining ingredients. Serve on bread with lettuce and tomatoes.
