Chickpea Minestrone

This Italian-grandma-inspired soup gets a boost of healthful protein from cooked chickpeas.

2 Tbs. olive oil

1 small onion, chopped (1¼ cups)

4 cloves garlic, peeled

3 large carrots, halved lengthwise and thinly sliced (2 cups)

3 stalks celery, halved lengthwise and thinly sliced (1 cup)

1 28-oz. can crushed tomatoes

2 sprigs fresh thyme
Ingredient Line: 
2 15-oz. cans chickpeas, rinsed and drained
Ingredient Line: 
4 cups low-sodium vegetable broth
Ingredient Line: 
1 ¼ cups (6 oz.) ditalini pasta
Ingredient Line: 
⅓ cup chopped fresh basil, plus more thinly shredded basil for garnish
Ingredient Line: 
6 Tbs. Parmesan cheese, for serving, optional

Instructions: 

1. Heat oil in large pot or Dutch oven over medium heat. Add onion and garlic, and sauté 4 minutes, or until softened. Add carrots and celery, and cook 5 minutes, stirring occasionally. Stir in tomatoes, add thyme sprigs, and cook 2 minutes more. 

2. Smash 1/2 cup chickpeas with back of a fork to form paste. Add smashed and whole chickpeas, broth, and 2 cups water to pot. Bring to a boil, then reduce heat to medium-low, and simmer 5 minutes. Add ditalini and basil, and cook 7 to 8 minutes, stirring occasionally. 

3. Thin soup with broth or water (if necessary), and adjust seasoning. Remove thyme sprigs, and serve garnished with shredded basil and sprinkled with Parmesan cheese (if using).

I made this soup over the weekend. It is very bland and too thick. Not worth making unless you spice it up. Chickpeas taste odd in this soup.

The ditalini pasta is it cooked or uncooked when added to the broth &amp; water?

How large is a large pot? And I presume the pasta is pretty cooked before mixing it in with everything... Right?

Made this soup for an intimate winter house party and it really hit the spot! Hearty, flavorful, warm and with all the major components for a meal: starch, veggies and protein. One of my new favorite soups and a definite cold-weather staple! The only thing I changed up was shredding the carrots and chopping them into smaller pieces, and pureeing about 2/3 of the soup before adding the pasta and basil to make it thicker and creamier. Highly recommend this recipe!

I didn't think this was bland at all, and I loved the chickpeas in it. I'm going to have leftovers tomorrow and im sure it will be even better a second day. It was also a hit with the kids and that's a win for me!

I used dried thyme and basil and added fresh chopped spinach. It was more "seasonal" as to what I had on hand.

Made this on a weeknight. Delicious! Even non-veg hubby and daughter loved it!

I made it according to recipe the first time, and it was good. The second time I made it, I used fire roasted diced tomatoes instead of the standard crushed tomatoes and added salt and pepper to taste. It's now a great soup thanks to added texture and flavor. A new go-to easy-to-make soup.

Fantastic recipe. I used only half the amount of pasta the second time I made it as the first time, it was too thick and was more like a stew with the full amount.

The flavors taste good together, but it took me at least an hour instead of 30 mins. The carrots and celery take a lot longer than it says in the recipe to cook them.

I added 2 bay leaves, used dried thyme (1/2 tsp) and dried basil (1 tsp) and added 1 package frozen chopped spinach instead of pasta. I agree that the carrots take longer to cook than what is listed.

I also added 1 TBS Bragg's Aminos for a little savory/salty flavor

I make the traditional pasta fagioli and this variation is great. I added rosemary and extra garlic. So easy and great taste.
