Chili Oil

Makes 1/4 cup

Store this ultraversatile oil in the fridge, and use it on pizza or roasted vegetables.
  • ¼ cup peanut oil
  • 1 Tbs. red pepper flakes

Heat oil in saucepan over medium-high heat. Add red pepper flakes, and cook until they sizzle. Pour oil into glass jar, cover, and cool to room temperature. Stir or shake before using.

If you like spicy, this sauce is excellent on pasta with pesto sauce. I may have put in more than 1 Tbs. red pepper flakes. The recipe is very simple but more than the sum of its parts.
