Classic Israeli Salad

An Israeli breakfast staple, this salad is also often served with lunch and dinner. The salad is made with tomatoes, cucumbers, onion, and plenty of parsley. Some top it with feta and olives, or dress it with tahini sauce.



Ingredient Line: 
4 Roma tomatoes, diced (2 cups)
Ingredient Line: 
2 Persian cucumbers or ½ English cucumber, diced (1 ⅓ cups)
Ingredient Line: 
½ yellow bell pepper, diced (⅔ cup)
Ingredient Line: 
⅔ cup chopped Italian parsley
Ingredient Line: 
3 Tbs. chopped green onion
Ingredient Line: 
2 tsp. olive oil
Ingredient Line: 
2 tsp. lemon juice


Toss together all ingredients in large bowl. Season with salt and pepper, if desired.

I just love Israeli salad. I just had some this morning. this is a nice variation that I look forward to trying.

so ... where's the alternate tahini sauce recipe that can be used for this?

Tahini Sauce ¼ cup tahini, stirred well 1 Tbs. lemon juice 1 clove garlic, minced (1 tsp.)

This is my kind of breakfast! I love it with some feta and a piece of sprouted grain bread.

So simple and fresh...though I can't imagine eating this for breakfast!

this is a big hit with everyone I have served it too, even my very "choosy" son in law! it's great!

This would be tasty for lunch, but it is totally NOT breakfast food

So how is feta cheese, vegan?

The feta cheese is optional and I don't see anywhere that it is claiming to be vegan. Great salad!
