Contemporary Waldorf Salad
3 medium crisp apples, cored and diced
1 ½ Tbs. fresh lemon juice
2 large stalks celery, diced
½ cup raisins
⅓ cup soy mayonnaise
¼ cup finely chopped walnuts
1 pinch ground nutmeg
2 cups mixed baby greens for serving
- In medium bowl, toss together apples and lemon juice. Add remaining ingredients except greens and toss until well mixed.
- Line 4 salad plates or shallow bowls with greens. Divide salad among plates and serve.
