Contemporary Waldorf Salad

In medium bowl, toss together apples and lemon juice. Add remaining ingredients except greens and toss until well mixed. Line 4 salad plates or shallow bowls with greens. Divide salad among plates and serve.
- 3 medium crisp apples, cored and diced
- 1 ½ Tbs. fresh lemon juice
- 2 large stalks celery, diced
- ½ cup raisins
- ⅓ cup soy mayonnaise
- ¼ cup finely chopped walnuts
- 1 pinch ground nutmeg
- 2 cups mixed baby greens for serving

Great salad! I used plain yogurt instead of mayo and it turned out pretty good.
