Cream of Oat Bran

30 minutes or fewer   Thick and rich, a bowl of this creamy cereal is like old-fashioned cream of wheat and provides 12 grams of protein. Walnuts and ground flaxseeds add more fiber and healthful omega-3 fats.
  • ½ cup unsweetened soymilk
  • ¼ cup cold water
  • ¼ cup oat bran
  • Pinch of salt
  • Dash of ground cinnamon
  • 2 Tbs. chopped walnuts, optional
  • 1 Tbs. ground flaxseeds, optional
  1. Combine soymilk, water, oat bran and salt in microwave-proof bowl. Cook in
  2. microwave on high power for 3 minutes, or until mixture thickens to desired
  3. consistency, stopping and stirring after each minute. Top with cinnamon, and walnuts and flaxseeds, if desired.
