Thick and rich, a bowl of this creamy cereal is like old-fashioned cream of wheat and provides 12 grams of protein. Walnuts and ground flaxseeds add more fiber and healthful omega-3 fats.
½ cup unsweetened soymilk
¼ cup cold water
¼ cup oat bran
Pinch of salt
Dash of ground cinnamon
2 Tbs. chopped walnuts, optional
1 Tbs. ground flaxseeds, optional
Combine soymilk, water, oat bran and salt in microwave-proof bowl. Cook in
microwave on high power for 3 minutes, or until mixture thickens to desired
consistency, stopping and stirring after each minute. Top with cinnamon, and walnuts and flaxseeds, if desired.
