Creamy Carrot Bisque
Serves 6
High fiber, low-fat potatoes add the creamy texture to this refreshing soup.
- 4 cups vegetable broth
- 2 cups water
- 2 cups sliced carrots
- 6 cloves garlic
- ½ red bell pepper, seeded and cubed
- 1 medium boiling potato, peeled and cubed (1 cup)

I tend to find soup recipes on VT to be a bit to watery for my taste. I took the number of cups of broth to 3 and only used one cup of water. It was the right consistency but only served 3.
