Creamy Chipotle Dressing

Makes 2 cups

30 minutes or fewer

The chipotle in this creamy dressing imparts a low, rumbling heat. Toss with your favorite salad greens, or use as a dip for vegetable sticks. Extra dressing will keep in the fridge up to 1 week.
  • ¼ tsp. whole coriander seeds
  • 1 cup prepared salsa
  • 1 cup vegan mayonnaise
  • 1 chipotle chile in adobo sauce, drained and diced
  • ¼ tsp. black pepper

Blend coriander seeds in blender until coarsely ground. Add salsa, mayonnaise, chipotle chile, and pepper, and blend until smooth.

I love this. I have made this using Vegenaise and Nayonaise, and I like them both. I have tried it with fresh salsa and with jarred salsa, and they were both excellent. I use this on a lot of things, but I really love to use it as a creamy sauce on bean burritos.

I am not a huge fan of chipotle, so I added freshly roasted poblano chili to the recipe to help mask that taste a bit and it was absolutely fantastic. I put it on tacos, enchilada casserole, egg scramble. Its very versatile.
