Creole Rice Pilaf

1 cup diced plum tomatoes

1 ½ cups short-grain brown rice

3 ½ cups vegetable broth, boiling

½ cup chopped fresh coriander

1 tsp. dried thyme

2 tsp. Bragg Liquid Aminos

Instructions: 

  1. Heat oil and crushed red pepper in 4-quart saucepan over medium-high heat, 1 minute. Add shallots, scallions and celery, and cook 3 minutes. Add mushrooms and tomatoes, and cook 2 minutes before adding rice. Cook mixture 2 minutes, stirring constantly.
  2. Add boiling broth, fresh coriander and thyme. Bring all to a boil, reduce heat to low, cover and cook 45 minutes, or until liquid is absorbed. Stir in liquid aminos, remove from heat and serve.
