Curried Vegetable Sauté

This quick curry is cooked in a single pot and makes a hearty meal in minutes when served over couscous.



Ingredient Line: 
1 Tbs. garlic oil
Ingredient Line: 
1 small onion, chopped (about 1 cup)

1 ½ tsp. curry powder

½ tsp. coarse salt

⅛ tsp. cayenne pepper

2 cups thinly sliced green cabbage
Ingredient Line: 
1 small sweet potato, peeled and finely diced (about 8 oz.)

1 cup cooked chickpeas or 1 cup canned chickpeas, rinsed and drained

3 Tbs. raisins
Ingredient Line: 
1 Tbs. minced fresh ginger
Ingredient Line: 
3 cloves garlic, minced (about 1 Tbs.)
Ingredient Line: 
1 cup low-sodium vegetable broth
Ingredient Line: 
¼ cup chopped cilantro
Ingredient Line: 
2 Tbs. coarsely chopped roasted cashew nuts


  1. Heat oil in large skillet over medium heat. Sauté onion, curry powder, salt and cayenne pepper about 5 minutes, or until onion begins to brown. Stir in cabbage, sweet potato, chickpeas, raisins, ginger and garlic. Sauté 2 minutes more.
  2. Stir in broth, and reduce heat to low. Cover and cook vegetables, stirring occasionally, about 10 minutes, or until soft. Spoon into shallow bowls. Sprinkle with cilantro and cashews, and serve.

We loved this. A rather strange sounding combination but it does really work well together. I used almonds instead of cashews as thats what I had on hand, and really recommend adding a nut to give it a little extra crunch.

This recipe is so easy and so good. I am always looking for recipes that use cabbage because my local CSA farm gives me lots.

I have to say, when I first read this, I thought that the combination of ingredients sounded strange. I'm glad I got past that and tried it, because it was fabulous! I've been sharing this recipe with friends all week, and everyone has loved it.

This recipe is a keeper. I substituted carrots and a little bit of cauliflower for the sweet potato. And it really did take <30 minutes to prepare.

This is my favorite go-to vegetarian recipe. No matter what I'm craving, this satisfies it all. It's full of flavor with a little zip, and there's even a little sweetness with the sweet potatoes. Very yummy. (I don't add the raisins or the cilantro)
