Curry paste (available in the Asian foods section of most supermarkets) is a thick, spicy seasoning used in Indian curries and stews. For a fast flavor lift, stir 1 tsp. into canned soups or bottled salad dressings.
- 2 Tbs. prepared curry paste
- 4 oz. soy crumbles
- 2 cups baby spinach leaves
- ½ cup shredded carrots
- ½ cup diced tomatoes
- ½ cup chickpeas (from 15.5-oz. can),drained and rinsed
- 6 large lettuce leaves
