Dairy-Free Peach Ice Cream

Serves 6

You don’t even have to peel fresh peaches to make this ice cream.
  • 4 cups sliced fresh peaches, or 1 lb. frozen peach slices
  • 1 cup vanilla soymilk
  • ¾ cup packed light brown sugar
  • 2 Tbs. lemon juice
  • ½ tsp. vanilla extract
  • ½ tsp. salt
  1. If using fresh peaches, spread slices in baking dish, and freeze 4 hours, or until firm.
  2. Place peaches and remaining ingredients in food processor, and blend until smooth. Serve immediately, or freeze 30 minutes for firmer texture.

I used rice milk and it was wonderful. I may not put the full amount of salt in next time. But it was very good.Thank you

I would have named this recipe "sorbet" instead of "ice cream". I made it with fresh peaches from farmers market and it was awesome! I liked it both ways, served right after it was made and froze the rest and ate it later. Yumo! My very picky-meat-eating-lactose intolerant husband liked it as well.
