Fresh Corn Chowder

Fresh Corn Chowder

Serves 4

30 minutes or fewer

30 minutes or fewer   Naturally sweet corn and creamy avocado make this chilled blender soup (no stove necessary!) deliciously rich.
  • 2 ½ cups almond milk
  • 2 ½ cups raw corn kernels, from about 5 ears or thawed frozen
  • 1 small avocado, peeled and diced (about 1 cup)
  • ½ tsp. salt
  • cracked black pepper to taste
  1. Pureé almond milk, 2 cups corn kernels, 3/4 cup avocado and salt in blender until smooth. Ladle into bowls, garnish with remaining corn and avocado, and sprinkle with cracked black pepper.

Wonderful soup for a hot summer day. Love the texture by adding corn and avacado as garnish.

This soup is AMAZING heated. I used oat milk instead of almond for a mild, sweet flavor, blended it all and then heated it gently. Also chunked up a few fingerling potatoes and threw those in. Delish!
