Fruity Peanut Butter Wrap

Fruity Peanut Butter Wraps

Serves 1

30 minutes or fewer

  • 2 Tbs. silken tofu
  • 1 Tbs. peanut butter
  • 1 pinch ground cinnamon
  • 1 8-inch multigrain or sprouted tortilla
  • 2 Tbs. chopped dry roasted unsalted peanuts
  • ¼ cup grated green apple
  • 6 halved red seedless grapes
  • ½ cup plain unsweetened soymilk or nonfat milk

Mash tofu with peanut butter and cinnamon in small bowl. Spread mixture on tortilla, and sprinkle with peanuts. Place grated apple and grapes in a line just below center of tortilla. Roll up tortilla, folding in sides as you go. Serve with soymilk or nonfat milk.

I think many think we should eat a traditional "breakfast" that should be certain foods. Myself I will have what my friends consider strange food for breakfast. Actually anything in the fridge is game. If its leftovers from dinner or just cut up veggies like tomato, cucumber, red bell pepper and avocado. Maybe a piece of fruit with it.

Hello! Great idea for breakfast and good recipe! Also could make a adjustment, for those who is allergic to nut like in my fam. Substitude peanut butter to sunflower seed butter or to make it more simple, I used caramel sauce and omitted peanuts. Also I do my own flour tortillias, since the ones from the store contain whole bunch of chemicals. When you look at the back in ingridients, there is half of the label full of stabilizers and additives, making it look like a bomb not bread, when the recipe is pretty simple: baking stick+flour+bakingflour+salty water.

Great recipe. I have made some variations like adding a banana and raisins with chia and flax seeds, plus pumpkin and sesame seeds instead of the grated apple, grapes and peanuts.
