Fusilli Bucati Lunghi with Roasted Red Pepper Sauce

Serves 4

30 minutes or fewer

Roasted red bell peppers star in this recipe for red sauce.
  • 2 Tbs. garlic-flavored olive oil
  • 1 cup jarred roasted red bell peppers, rinsed, drained, and chopped
  • ½ medium onion, finely chopped (½ cup)
  • 1 large carrot, finely diced (½ cup)
  • 8 oz. dry fusilli bucati lunghi

1. Heat oil in saucepan over medium-high heat. Add roasted peppers, onion, and carrot; sauté 5 minutes, or until onion begins to brown. Add 3/4 cup water, cover, and reduce heat to medium-low. Simmer 20 minutes.

2. Meanwhile, cook pasta in pot of boiling salted water according to package directions.

3. Remove roasted pepper mixture from heat, and purée in blender until smooth. Season with salt and pepper, if desired.

4. Drain pasta, and return to pot. Stir in red pepper sauce.

Love this recipe - I add a little tomato and red pepper soup and use veg broth instead of water for a little extra flavor! And definitely some crushed red pepper flake...mmmm!

I make this from time to time and enjoy it...it's a nice twist on traditional pasta sauce. I add a bit of crushed red pepper to mine for a little kick and always top it with some fresh basil. Sometimes I add peas, sometimes tofu, sometimes spinach. Tasty!

Fun Pasta - Boring Sauce. I even tried adding a few additional items to make the sauce more flavorful but I just couldn't get the flavor to pop.

For me, this recipe is very favorable because it's light, the carrot is a nice twist with the red peppers. you know it can also be eaten without blending the three veggies, I can almost taste the recipe.

We liked this one. The long twisty noodles are fun and the red sauce is very pleasant- it helps to add a bit of salt and pepper. We also served it with chopped spinach and sauteed tofu (olive oil, dried onion/garlic, oregano and soy sauce).

This recipe was good but not great. If I were making it again I would add some tabasco and veggies, maybe some arugula or something.
