Garden Bagel

This bagel becomes a salad that you can hold in your hand. You can make your own hummus or baba ghanoush, or buy either ingredient premade at your supermarket.

1 bagel

2 tsp. olive oil

3 heaping Tbs. hummus or baba ghanoush
Ingredient Line: 
¼ cup chopped lettuce

1 Tbs. diced tomato
Ingredient Line: 
1 Tbs. diced avocado
Ingredient Line: 
1 Tbs. diced red onion
Ingredient Line: 
1 Tbs. chopped black olives or pitted kalamata olives
Ingredient Line: 
½ tsp. capers
Ingredient Line: 
1 Tbs. salad dressing
Ingredient Line: 
1 tsp. grated Parmesan cheese, optional

Instructions: 

  1. Slice a thin portion off the top of a bagel. Using your fingers, scoop out some of the insides to make a shell.
  2. Heat olive oil in a small skillet over medium heat, and saut8E bagel bits scooped from bagel. When browned, remove from heat, and set aside.
  3. Spread hummus or baba ghanoush equally in both bagel shells, and set aside. Mix lettuce, tomato, avocado, red onion, olives and capers together with salad dressing. Spoon mixture into bagel shell. Sprinkle with Parmesan cheese, if using, and top with browned bagel bits.
