Garden Bagel

30 minutes or fewer
This bagel becomes a salad that you can hold in your hand. You can make your own hummus or baba ghanoush, or buy either ingredient premade at your supermarket.
- 1 bagel
- 2 tsp. olive oil
- 3 heaping Tbs. hummus or baba ghanoush
- ¼ cup chopped lettuce
- 1 Tbs. diced tomato
- 1 Tbs. diced avocado
- 1 Tbs. diced red onion
- 1 Tbs. chopped black olives or pitted kalamata olives
- ½ tsp. capers
- 1 Tbs. salad dressing
- 1 tsp. grated Parmesan cheese, optional
