Garlicky Collard Greens

Collard greends can be sandy, so to clean them, submerge them in water to loosen any grit, then wash and dry. This technique of blanching the collard greens in boiling water, then sautéing them takes away any bitterness.

1 lb. chopped collard greens

2 Tbs. olive oil
Ingredient Line: 
4 cloves garlic, minced (about 4 tsp.)

Instructions: 

1. Bring large pot of water to a boil. Add collard greens, and simmer 5 minutes. Drain.

2. Heat olive oil in same pot over medium heat. Add garlic, and sauté 1 to 2 minutes, or until golden brown and fragrant. Add greens, and sauté 5 minutes, or until tender. Season with salt and pepper, and serve warm.

Easy collard without meat

This is a wonderful recipe, and has made my husband and me totally re-think the potential of collard greens -- thank you!

These are delicious and super fast and easy! I salted the boiling water before putting in the collards- don't know if that made any difference but the end result was really good.

I use this recipe but when I'm sauteing the garlic I put some bread crumbs, Lemon Juice, Adobo & Some Shredded Cheese :)

Blanching really does eliminate the bitterness. Thanks for the recipe.
