Ginger Gems

You don't even need an electric mixer to make these drop cookies. For a spicier cookie, add 1 tsp. ground cinnamon and 1 tsp. ground ginger to the dough.

¾ cup sugar

1 Tbs. blackstrap molasses

1 Tbs. vanilla extract

2 cups whole-wheat flour

1 tsp. baking soda

½ tsp. salt

1 cup finely chopped walnuts

4 ½ Tbs. lime juice

3 cups confectioners' sugar


1. Preheat oven to 375°F. Coat baking sheets with cooking spray. Whisk together sugar, margarine, oil, ginger, molasses, vanilla and 1/4 cup warm water. Combine flour, baking soda and salt in separate bowl. Stir flour mixture into sugar mixture. Fold in walnuts.

2. Drop spoonfuls of dough 1 inch apart onto prepared baking sheets. Bake 10 to 12 minutes. Cool 3 minutes, then transfer to wire racks to cool completely.

3. Whisk lime juice and sugar until smooth. Dip cookies in glaze. Let glaze harden on wire racks, then store cookies in airtight container.

Just made these tonight! They turned out really well! The only adjustments I made are 1) I used splenda in the cookie dough, 2) I used 1 Tbs of vegan margarine with half a banana, and 3) I actually had to add about 1/2 cup of water to the dough to make it come together. Very yummy!

What can I use Pine Nuts For ? Would they be a good Sub for Walnuts ?

O My Goddess - Pine Nuts are quite amazingly versatile, in desserts & savory dishes, and are a great substitute for other nuts. I recently discovered a Lasagne Roll-up recipe for pine nut-eggplant roll ups. A very helpful appliance to have is a mini-food processor to chop nuts, spices, chopped veggies(onions, garlic, celery, carrots) & herbs together. Further, using drained, pressed, and mashed extra firm tofu(mashed with a hand potato masher to be the consistency of cottage cheese), is a great base for a filling for spread for lasagne noodles or to fill large shells. Prepare the tofu, then add all your favorites to it. Pine Nut and Rosemary Cookies are sublime!! Tofutti Cream Cheese is an excellent base for appetizer spreads - make a concoction of finely chopped pine nuts, herbs, spices, a little mustard, dab of vegan mayo(Vegenaise brand), a few drops of Annie's Worchestershire Sauce(vegan & really tasty), sweet onion, garlic - just go nuts!
