Good Fat Dressing

This zingy dressing makes enough for several salads. Try it in bean-and-vegetable combos or drizzle it over mixed green salads. Use a glass canning jar marked in 1-ounce increments both to measure ingredients (2 tablespoons equals 1 ounce) and to store leftovers.



Ingredient Line: 
½ cup balsamic vinegar
Ingredient Line: 
¼ cup olive oil

¼ cup canola oil
Ingredient Line: 
2 Tbs. coarse-grained mustard
Ingredient Line: 
1 Tbs. pure maple syrup or ½ tsp. sugar
Ingredient Line: 
2 tsp. dried basil


  1. In glass jar with tight-fitting lid, combine all ingredients and shake to blend. Store in refrigerator. Bring to room temperature and shake well before using.

Why canola oil? The dressing would be healthy with just olive oil.

Actually, canola oil is very similar to olive oil in terms of its profile of good fats. Additionally, it costs less and has a lighter flavor than olive oil. Unless you're really looking for the taste of olive oil, canola can be a healthy, less expensive stand-in.

Why does the dressing appear to be creamy but none of the ingredients listed would seem to allow for creaminess?
