Good Fat Dressing
Makes 1 1/4 cups
This zingy dressing makes enough for several salads. Try it in bean-and-vegetable combos or drizzle it over mixed green salads. Use a glass canning jar marked in 1-ounce increments both to measure ingredients (2 tablespoons equals 1 ounce) and to store leftovers.
- ½ cup balsamic vinegar
- ¼ cup olive oil
- ¼ cup canola oil
- 2 Tbs. coarse-grained mustard
- 1 Tbs. pure maple syrup or ½ tsp. sugar
- 2 tsp. dried basil

Actually, canola oil is very similar to olive oil in terms of its profile of good fats. Additionally, it costs less and has a lighter flavor than olive oil. Unless you're really looking for the taste of olive oil, canola can be a healthy, less expensive stand-in.
