Grated Carrot and Celery Root Salad with Hemp Seeds

Dark flecks of shelled hemp seed play off the bright color of carrots in this salad.



Ingredient Line: 
2 medium carrots, peeled
Ingredient Line: 
8 oz. celery root, peeled
Ingredient Line: 
3 green onions, chopped (¼ cup)
Ingredient Line: 
¼ cup shelled hemp seed
Ingredient Line: 
2 tsp. Dijon mustard
Ingredient Line: 
2 tsp. white wine vinegar
Ingredient Line: 
4 tsp. hemp seed oil


1. Grate carrots and celery root using finest grater setting of food processor. Transfer to bowl, and stir in green onions and hemp seed.

2. Whisk together mustard and vinegar in small bowl. Whisk in hemp seed oil. Season with salt and pepper, if desired. Add vinaigrette to carrot and celery mixture, and toss to coat.

Delicious! I like many didn't really know what to do with this ugly piece of produce.the changes I made were to use my hand cheese grater, although it took longer it made a nice crunchy salad. I was out of hemp seeds so substituted sesame seeds &amp; added a handful of dried cranberries to give it that salty sweet balance we love. Great recipe!
