Greek-Style Pita Pocket
Vary this tasty pita by using other types of cheese, soy or dairy. If desired, serve the filling on its own as a salad. You could also mix in some canned chickpeas for a heartier meal.
¼ cup chopped romaine lettuce
2 Tbs. crumbled feta cheese
2 Tbs. chopped black olives
1 Tbs. chopped jarred roasted red peppers
1 whole-wheat pita pocket, cut in half
- In small bowl, combine lettuce, cheese, olives, peppers and dressing and mix well. Spoon into pita halves. Wrap tightly in plastic wrap.
