Holiday Eggplant Caviar
Makes 3 cups
This colorful spread gets its fresh taste from finely chopped onions and a splash of red wine vinegar. It will keep for up to a week in the fridge and makes a great hostess gift. Serve on crackers or pita wedges, by itself or with low-fat cream cheese.
- 2 medium eggplants (1 ½ lb.)
- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 small onion, finely chopped (1 cup)
- 2 ½ Tbs. red wine vinegar
