Honeyed Sweet Potatoes

Sweet potatoes and apples get baked with a drizzle of honey and a sprinkling of cinnamon, then puréed to a creamy consistency.



Ingredient Line: 
2 large sweet potatoes, peeled and cut into large chunks (2 lb.)
Ingredient Line: 
2 large Golden Delicious apples, peeled, cored, and cut into large chunks
Ingredient Line: 
2 Tbs. olive oil
Ingredient Line: 
1 tsp. honey
Ingredient Line: 
⅛ tsp. ground cinnamon


Preheat oven to 350°F. Place potato and apple chunks in 13- x 9-inch baking dish, and drizzle with oil and honey. Sprinkle with cinnamon, and season with salt, if desired. Cover with foil, and bake 30 minutes. Remove foil, and bake 30 minutes more, or until very tender. Cool 5 minutes. Transfer mixture to food processor, and purée until smooth.

Made this last night, it was like dessert! I am not a big fan of sweet potatoes but these really are delicious. (I used one granny smith and one golden delicious)

These tasted good but I think using the food processor made the consistency wrong. My daughter said it was like eating baby food! I would use a potato masher next time.

The flavor is TOP NOTCH! I will definitely make them again. I used a Vitamix and like another reviewer mentioned, it was a baby food consistency and that wasn't exactly what I was going for. I will make it again and try with a potato masher like mentioned. Because of the flavor I will definitely make it again.

OMG-- This was fabulous!!! We thoroughly enjoyed this dish. I took the advice of others and used my handheld blender and I was able to make a "chunky mash." Another tip I stirred in about 2 teaspoons of butter and drizzled more honey on top. Also if you can find them used Japanese and regular sweet potatoes they are much sweeter.
