Hummus with Tomato-Mint Salsa

This party-worthy dip doubles as a delicious sandwich filling.

2 medium tomatoes, diced (1 ½ cups)

¼ cup diced white onion

2 Tbs. olive oil

2 Tbs. chopped fresh mint

Instructions: 

Stir together tomatoes, diced onion, oil, mint, and lemon juice in small bowl; season with salt and pepper, if desired. Let stand 5 minutes. Spread Classic Hummus in shallow dish, and mound salsa in center.

I made this last night for dinner and it was fantastic! Perfect ratio between the onion and tomato -delicious as a dip and great for pita pockets with some lettuce!
