Indian Mixed Grill

Lentils and rice go well with this grilled vegetable medley.

4 Japanese eggplant, sliced

1 bell pepper, sliced

1 large onion, cut into 8 wedges

¼ cup olive oil

2 Tbs. lemon juice

2 tsp. garam masala

2 cloves garlic, minced (2 tsp.)

1 ½ tsp. ground cumin

½ tsp. grated fresh ginger

4 green onions, finely chopped
Ingredient Line: 
1 large tomato, finely diced
Ingredient Line: 
1 cup plain low-fat yogurt

½ cup chopped fresh mint
Ingredient Line: 
¼ tsp. grated fresh ginger

Instructions: 

1. To make Vegetables: Toss together all ingredients in bowl. Season with salt, if desired. Let stand 15 minutes.

2. To make Raita: Stir together all ingredients in medium bowl.

3. Preheat grill or grill pan over medium heat. Grill bell peppers 8 minutes, onion 6 minutes, and eggplant 5 minutes. Serve with Raita.
