Jackfruit Gyros

Pile this spicy jackfruit filling into warmed pitas, and serve with soy yogurt, shredded lettuce, sliced onions and tomatoes, and a dash of hot sauce.

1 Tbs. vegan margarine

1 large onion, halved and thinly sliced (2 cups)

1 20-oz. can young jackfruit in brine, rinsed, drained, and pulled apart into shreds

¾ cup low-sodium vegetable broth
Ingredient Line: 
4 Tbs. lemon juice, divided

2 tsp. dried oregano
Ingredient Line: 
1 tsp. low-sodium soy sauce
Ingredient Line: 
¾ tsp. ground coriander

Instructions: 

1. Heat margarine in skillet over medium heat until sizzling. Add 
onion, and sauté 3 to 4 minutes, or until softened. Add jackfruit, and cook 20 minutes, or until browned and caramelized.

2. Add broth, 2 Tbs. lemon juice, oregano, soy sauce, and coriander, and season with salt and pepper, if desired. Simmer 10 to 15 minutes, or until liquid has almost completely evaporated.

3. Stir in remaining 2 Tbs. lemon juice.

I have never heard of jack fruit and have never seen them on a store shelf. What is this and is there a substitute for it if I can't find it? Thanks!

Sweetened canned jackfruit is very common in Asian markets. Jackfruit in brine requires a bit more searching. I'm going to try this recipe, though I'll substitute coco oil for vegan margarine.

you can buy canned jackfruit in brine at Indian stores, its very common in Indian cooking. :)

This is delicious! I love jackfruit and usually make this as shredded mock "pork". This recipe is a great change and addition to my collection!

I also had a hard time finding jack fruit, so instead I substituted papaya and it was fantastic!

Has anyone found an unsweetened soy yogurt? All of the locally available options are sweet, even the ones labeled "plain." They're pretty disgusting on their own and might be even worse paired with this savory dish.

unsweetened vegan yogurt is hard for me to find. But it is very easy to make at home, so I'll probably just try that. This recipe sounds divine!

I found non-sweet jackfruit (in a can/in brine) in an Asian market (HMart). Looking forward to trying this recipe, however I am gluten-free so I will be substituting the soy sauce with BRAGGS liquid aminos

Tamari soy sauce has no wheat, so you can use that as well.
