Japanese Asparagus Dengaku

Serves 4

30 minutes or fewer

Dengaku is a Japanese barbecue tradition that calls for grilling foods coated in a miso-based sauce. It also works great in the broiler. Choose asparagus that are not too thin—you want them to stay firm after broiling.
  • 4 tsp. white miso
  • 1 lb. asparagus, bottom ends trimmed
  • 1 Tbs. lemon juice
  • 1 Tbs. tahini
  • 2 tsp. pure maple syrup

1. Preheat broiler to high, and arrange asparagus on rimmed baking sheet.

2. Whisk together miso, lemon juice, tahini, and maple syrup in small bowl. Spoon or brush miso mixture over asparagus.

3. Broil asparagus 5 to 6 minutes, or until tender and speckled brown.

I cooked this one the grill and loved it! Grilling with the paste makes the tips nice and crispy while the stalks are still firm but with a nice roasted flavor.
