Lemon Dressing

Makes 1 cup

30 minutes or fewer

In small bowl or glass jar with tight-fitting lid, combine all ingredients. Whisk or shake until well blended.
  • ¼ tsp. coarse salt
  • ¼ tsp. freshly ground pepper
  • 2 large cloves garlic, minced
  • ½ cup olive oil
  • ½ cup fresh lemon juice (3 lemons)
  • 2 Tbs. chopped scallions (white and light green parts)
  • 2 Tbs. chopped flat-leaf parsley
