Light Roquefort Dressing
Blue cheese dressing is an American favorite—but boy, can it add calories to a salad. This homemade version is lightened up with low-fat mayonnaise and fat-free buttermilk. Roquefort is a sheep’s milk cheese from the south of France, but you can substitute any blue cheese. This Roquefort dressing will keep for about a week in the fridge.
- Mash cheese with fork in bowl, leaving some lumps. Fold in mayonnaise, buttermilk, and olive oil with fork. Stir in vinegar.
