Mango-Pea Salad with Sesame Dressing

30 minutes or fewer
Toss this salad with the dressing at the last minute, otherwise the peas will start to turn yellow as the acid in the lime juice “cooks” them.
- 2 Tbs. extra virgin olive oil, plus more for drizzling
- 3 cups soybean sprouts
- 2 cups fresh or thawed frozen peas
- 2 mangoes, peeled and diced
- 2 bunches green onions, chopped (about 1 cup)
- ½ cup chopped fresh mint
- 3 Tbs. black sesame seeds
- 3 Tbs. lime juice
- 2 Tbs. toasted sesame oil
- 1 Tbs. vegetable oil
- 2 tsp. minced fresh ginger
- ½ tsp. brown sugar
- ½ tsp. salt
